Light My Fire
Dayton Street Grille’s s’more martini will bring you from summer to fall
After a sweltering summer, toasting marshmallows might be the last thing on your mind. But what about a s’more martini?
The drink, a chocolate cocktail with a graham-cracker rim, is a sweet amalgam of youth and adulthood. What’s irresistible—at least for those with a sugar habit or nostalgic for camp—is the lightly charred marshmallow floating on top. Dunk it for full effect.
Bartender Zack van Driel, who moved to Madison last year from Virginia, came up with the marshmallow garnish as joke, thinking Dayton Street Grille would veto any cocktail pyrotechnics. He was surprised to receive the go-ahead.
“In Virginia bars, we aren’t allowed to light things on fire,” van Driel says.
He plans to celebrate fall in Wisconsin with apple-picking, cider runs and, yes, martinis.
“Hey, if it’s hot outside,” he says, “at least a flaming marshmallow is a good mnemonic to transport you to fall.”
RECIPE: S'more Martini
1.5 ounces Stoli Vanil vodka
1.5 ounces Frangelico
1.5 ounces cream or half-and-half
2 tablespoons chocolate syrup, plus extra for
the rim
Crushed graham crackers, for the rim
1 marshmallow, toasted
Drizzle the rim of martini glass in chocolate syrup, then coat with crushed graham crackers. In shaker with ice, combine vodka, Frangelico, cream and 2 tablespoons chocolate syrup. Shake; pour into glass. Garnish with toasted marshmallow.
