Reviving old school techniques at Underground Butcher

For someone used to buying meat displayed in plastic wrap, a butcher shop can be a bit intimidating. And be it text messaging or Twitter, face-to-face interaction is in decline. Not so at the Underground Butcher (the latest endeavor of the Underground Food Collective), where a personable staff is able to advise more quickly—and more reliably—than a Google search. An array of locally sourced fresh and cured meats, including many unique items, is sure to make the most jaded of foodies drool. Also available are artisan cheese, homemade comestibles and epicurean sandwiches. Underground Butcher proves that everything old is new again.
