Mango-Mint Lassi for Summer

A cool smoothie treat

Quick to whip up, nutritious and endlessly adaptable, smoothies are the perfect summertime treat. Some people are smoothie minimalists, blending only fruit, juice and ice. Others are everything-but-the-kitchen-sink advocates, mixing a medley of frozen fruit, protein powders, greens, nut butters and milk. I fit somewhere in the middle—I opt for frozen fruit, yogurt, milk or juice and perhaps a hint of spice. A mango lassi is an Indian variation, combining fresh mango, yogurt, milk and ice. My variation includes a bit of mint from the garden or farmers’ market, mango nectar and a dash of warm spices. This refreshing drink is ready in minutes, leaving you ample time to soak up the summer sun.

RECIPE: Mango-Mint Lassi

INGREDIENTS

1 mango, sliced and cut off the pit
6 mint leaves, finely chopped
3/4 cup plain yogurt
1/2 cup mango nectar
2 tsp sugar
6 ice cubes
1/4 tsp ground cardamon
Nutmeg

DIRECTIONS

Blend all ingredients except the nutmeg and pour into a glass. Grate a bit of fresh nutmeg over the top. Garnish with fresh mint.
