Pizza Dough

3 3/4 cups all-purpose flour
1 3/4 cups lukewarm water
1 tablespoon olive oil
1 tablespoon instant yeast
1 teaspoon fine sea salt

Mix everything in a mixer (or KitchenAid) and knead for 9–12 minutes. Let rest (covered) one hour before using.

Pizza Sauce

“Our sauce recipe is very simple. It consists of quality Italian canned tomatoes, crushed and then mixed with a little olive oil, salt and pinch of dried oregano,” says Mangano.

Sfincionello

Crushed tomatoes cooked down with onions, oil-cured anchovies, plain breadcrumbs,
grated Pecorino cheese.

Parmigiana

Crushed tomatoes, mozzarella, Grana cheese, fried eggplant.

Four Stagioni

Crushed tomatoes, mozzarella, marinated artichokes, homemade sausage, prosciutto arrosto, sautéed wild mushrooms.

Tartufo

Shaved black truffles, truffle oil (optional), crushed tomatoes, mozzarella, buttered asparagus, fresh egg.

Celentana

Crushed tomatoes, chopped garlic, grated Pecorino cheese.
