A Cucumber Mint Spritzer is utterly refreshing
Quick—think of two refreshing flavors. If you came up with cucumber and mint, you can combine them in a cocktail that’s perfect for a sweltering day.
The drink is the Cucumber Mint Spritzer and the brainchild of Michael Banas, general manager at Lombardino’s. He started with cucumber-infused vodka and added mint, lime and sugar.
For the past two summers the crisp cocktail has proved popular with diners looking to cool down and refresh.
“It really pops with the cucumber,” Banas says. “People who like it love it.”
RECIPE: Cucumber Mint Spritzer
2 oz. cucumber-infused vodka (see recipe below)
3 mint sprigs
3 lime wedges
1 sugar cube
Pick the mint and muddle with the lime wedges, sugar and cucumber vodka in an Old Fashioned glass. Add ice and top with soda water. Garnish with a mint sprig and cucumber slice.
Cucumber-Infused Vodka: Combine one bottle vodka and five cucumbers, peeled and sliced, in a glass container; refrigerate for five to seven days. Remove cucumbers from vodka. Store in the refrigerator for up to one month.
