What's That Wednesday: Crispy Yams at Next Door Brewing
The "Crisps" appetizer plate
What’s In It
-Thin, crispy yam slices
-Chimichuri sauce for dipping
Why This Dish?
When it comes to bar snacks, I always look for a dish that strikes a balance between familiar and fresh, which often means something prepared in the requisite deep-fried style but with a more interesting flavor and texture than your standard onion rings and fries. Enter the crisps from newly-opened Next Door Brewing, an east-side hangout serving its own craft beer and delicious, locally sourced eats. These yam crisps are good on their own, but what makes them a standout is the sprinkling of sea salt and the unexpected chimichurri sauce made fresh with parsley, cilantro, extra virgin olive oil, fresh garlic, red wine vinegar, red onion, lime, honey and red pepper flakes. The chimichurri, like pretty much everything else coming out of the kitchen, is made in-house, says chef Kevin Rikli. And did we mention the beer?
